1. Choose fresh and delicious lychee:
Select lychee that have thick, small-pitted skins without wormholes. Signs of good quality include a reddish-pink color, medium size, even round shape, firm texture, small fresh stems, and green leaves on the branches. Typically, the top fruits exposed to more sunlight are sweeter and more attractive compared to the lighter-colored ones at the bottom. Avoid buying lychee that are rough, have black spots indicating insect damage, or stems with small holes, which are signs of pests, making them less tasty.
2. Remove stems and wash thoroughly:
After purchasing, use scissors to cut each lychees, leaving about 1-2 cm of stem to make peeling easier when eating. Rinse quickly several times to clean off bacteria and fungal residues on the skin, which can spoil the lychees if left for long. Avoid soaking them too long as it can cause the lychees to absorb water and spoil faster during storage.

3. Drain excess water:
After washing, place the lychee in a colander to drain naturally. If there are many lychees, spread them out evenly in the colander for quicker drying. You can use a towel or cover the colander to prevent the skins from drying out.
4. Proper storage:
Divide the lychees into portions and place them in boxes (either cardboard or specialized plastic containers). Line the bottom of each box with a layer of paper towels before adding the lychees. Continue layering with paper towels between each layer , and finally cover the top layer with another sheet of paper towels. Seal the box tightly and store it in the refrigerator’s cool compartment. If you don’t have boxes, you can wrap the lychees in a slightly damp cloth before placing them in the fridge.
Using these methods, lychees can be stored for about 1.5 to 2 months while keeping their skins fresh and red, and their flesh juicy. Alternatively, you can peel and deseed the lychees, divide them into portions, and store them in specialized containers with ice packs in the fridge. When ready to eat, thaw naturally to enjoy fresh lychees.
